Secret chocolate mousse – sweet potato and cacao
This serves 2 as a hearty desert or 3-4 as a little ‘something sweet’ to finish your meal.
It’s super rich and it tastes of pure chocolate.
Because it’s so rich smaller portions can be all you need.
It’s also has the bonus of being really easy to make.
It easily keeps a day in the fridge so great for pre-preparing for a dinner party.
1 medium sweet potato (baked at 180 degrees Celsius for 55 mins, skin removed then mashed and cooled). The sweet potato I used was approx 275g with skin on pre-cooked.
1 large banana
8 pitted dates
2 heaped tablespoons almond butter
3 tablespoons cacao powder
A splash of milk
Optional toppings to sprinkle on top for decoration: pumpkin seeds, chai seeds, bee pollen, frozen raspberries.
1. Place all ingredients into a food processor and blend until smooth.
2. Serve in either ramekin dishes or wine glasses.
3. Sprinkle optional decorative topping on the top.
