One of my close family members was in hospital last week. I felt like baking them a cake. Food is so much more than the nutrients within it. It’s culture, sharing and expressing to someone how much you love them.
Thought I’d post this recipe this week, in case you want to bake someone a cake to show them how much you love them ❤️.
🔹250g dates
🔹1 ripe banana
🔹100g fine polenta
🔹1 teaspoon cinnamon
🔹2 teaspoons baking powder
🔹6 tablespoons milk – I used almond milk but any will be fine.
🔹3 heaped tablespoons cacao powder
🔹2 eggs (or make up 2 chia eggs if wanting to make the cake vegan).
1. Preheat oven to 180 degrees Celsius (fan). 2. Roughly chop the dates – set aside.
3. Mash the banana into a mixing bowl.
4. Add the cacao, polenta, cinnamon and baking powder to the banana and stir until combined.
5. Add the milk, chopped dates and eggs (roughly beaten) and stir.
6. Pour the mixture into a loaf tin, lined with baking parchment or well greased.
7. Bake for 35-40 mins, a skewer should come out clean.
8. Leave to cool for 5-10 mins then tip out of the loaf tin to cool on a cooling rack.
9. Store in an air tight container.
