Stewed Apple & Cinnamon Crumble
Last week my neighbour kindly told me to pick all the apples and pears from her fruit tree that were hanging over my side of the garden wall. Yesterday we made an apple crumble. We didn’t plan ahead well and were lacking some key ingredients for a crumble topping! As such I experimented and I have to say the result was super yummy!
I did a single extra portion too for my neighbour. So not only did I have the joy of baking but also the joy of sharing our creation as a thank you. Social connectednesss and neighbourlyness in particular is something I feel is dying out but can really boost wellbeing.
Here’s the recipe for this home comfort and our first crumble of autumn!
Recipe serves 4
FOR THE TOPPING :
🔹10g ground almonds
🔹50g chopped mixed nuts
🔹30g flaked coconut
🔹1 tablespoon coconut oil
🔹1 teaspoon nutmeg
🔹1 teaspoon Cinnamon
🔹1 tablespoon golden sugar
FOR THE BASE:
🔹5 large cooking apples
🔹2-3 teaspoons cinnamon (depending on how much you like cinnamon!)
🔹3 tablespoons (+ 2 more) water
1. Preheat the oven at 180 degrees (fan).
2. Cut up the apples into large slices.
3. Put apples into a large saucepan with 3 tablespoons of water and add the cinnamon.
4. Heat at a low-medium heat, lid of the saucepan on, stirring occasionally. If the base of the saucepan becomes dry and the apple starts to stick, add another couple of tablespoons of water.
5. Whilst the apples are stewing make the base.
6. Put all the ingredients for the base other than the coconut oil into a large bowl.
7. Stir to combine.
8. Add the coconut oil and rub this in, using your hands, until there are no clumps of coconut oil and it is equally distributed between the mixture.
9. Turn off the apples and place into the bottom of a baking dish.
10. Sprinkle the crumble topping mixture evening on top.
11. Bake in the preheated oven for 20 minutes.
12. Serve warm and with whatever you like best, ice cream, cream, custard, yoghurt…. Or just by itself!
